Dark Chocolate Sesame Mousse

This mousse is light and airy texture and has a rich chocolate taste. The hint of toasted sesame adds a nutty touch to the dark chocolate.

Ingredients:

(makes 8 servings)

  • 100g dark chocolate (at least 70% cocoa), chopped into small pieces

  • 2 eggs, whites and yolks separated

  • 200ml cream

  • 1 tsp toasted sesame oil

  • 3 tbsp brown sugar

  • a pinch of salt

  • Optional: 30g cocoa nibs

Special Equipment Needed:

  • Optional: Hand / stand mixer

Instructions:

  1. Make a water bath: Place a heat-proof bowl in a pot filled with water over medium heat. Add the chocolate into the bowl and stir the chocolate regularly. Once your chocolate is melted, turn the heat down to low.

  2. In a bowl, beat the egg whites, 1 tbsp of sugar, and a pinch of salt until stiff peaks form. Put aside.

  3. In another bowl, combine the egg yolks, cream, sesame oil, and 2 tbsp of sugar. Whisk until the mixture is slightly stiffened (this should take around 5 min).

  4. Add the melted chocolate into the cream mixture and combine.

  5. Carefully fold in the egg whites. (If you have cocoa nibs, add them now.)

  6. Let the mousse set for at least 3 hours in the refrigerator before you serve. Sprinkle some toasted sesame seeds and serve.
